As for me, I kept this habit, although, at the walnut kernel boiled in the huge cauldron (like my grandmother), I did not dare. But, every autumn I prepared cucumbers in brine or Bulgarian, donuts according to a secret recipe :) and vegetable soup. I also make sure that in my pantry there are jars with jam, jam, compote, even liqueurs, refined. About zacusca I can't say that it was indispensable, but the assorted pickles, cabbage salads, etc. they are obligatory, as in any householder's house.

Cucumbers are the ones that are consumed in quite a considerable amount, and the tastes in the family are divided. Some people prefer pickled cucumbers, according to an old recipe taken from the family. It sounds like this:

Cucumbers in brine

Wash the cucumbers and put them in a bowl according to the amount we have. Prepare the brine: to each liter of water put a tablespoon of salt, to five liters of water add a tablespoon of salt. Boil the brine and pour hot over the cucumbers. Cover with a towel and leave until the next day. We also prepare a brine that we let cool and to which we put 100 ml. vinegar for 5 liters of water.

The next day we put the cucumbers in jars with garlic, dill, pepper, horseradish, hot peppers if they want spicy, cherry twigs, etc. Pour the cold brine and leave the jars without fixing the lids, 2-3 days. Fill in where necessary, then staple and place the finished product on the shelves in the pantry.

As you probably know, pickles in brine are the healthiest. The explanation is not sophisticated: preserved by this process are much easier to digest. They contain beneficial enzymes, antibiotics and anti-carcinogens and develop a healthy intestinal flora compared to those in vinegar.

Bulgarian cucumbers

The other party's preference is the recipe for cucumbers prepared according to the & # 8220Bulgar & # 8221 recipe. I don't even know if it really has Bulgarian origins, but I know that I somehow personalized one, after, inspired by several recipes, I managed to mix one to our taste. This is quite simple, namely:

In each jar I put salt, sugar, garlic, onion, dill, horseradish, celery and about 2 fingers of vinegar. Place the cucumbers & # 8211 small, cornice- wash beforehand, fill with water and staple. Then I put in the oven (100 degrees) the jars prepared in this way and leave them until I notice that they change their color a little. I recommend them in salads, where they complete the taste and give the final grade.

Bell peppers

It's a whole story with donuts. Once upon a time, an important person, you know what I'm saying, the principal's secretary, boasted of a great recipe for donuts in vinegar. If she was great, she obviously had a secret, which she obviously & # 8216mneai, he didn't say it. That's why the first attempt failed, but I didn't give up either. I tried and changed the recipe every time it came out. Then, I replaced the sugar with honey and I got to the taste, the aroma, everything that the donuts prepared by me have to be to the taste of all those who eat them. The secret of success lies in the maximum 1-2 minutes of holding in the solution on the fire.

For the vegetable soup I use the vegetables and greens from the production of my own so-called garden. Although this year was dry and I had a very small harvest compared to previous years, I managed to prepare enough for the winter.

Delicacies

Of course, I could not forget the delicacies, more precisely the jams only good for pancakes, donuts and the like. We passed by the market where we found our & # 8220friend & # 8221 who has been selling us berries for several years. They are sweet, tasty and a little more expensive than last year, but the benefits of blueberries always win. A true miracle of nature, blueberries play an important role in supporting vision, regenerating blood vessels and normalizing blood sugar or slightly dilating the coronary vessels. Therefore, we took blueberries for jam and blueberries that are not missing from our pantry. Because you need vitamins to strengthen your body, here is a seasonal salad, extremely simple and very easy to prepare. All you need is celery, 2 apples, 2 carrots and 2 tablespoons of light mayonnaise.
Put all the ingredients on a small grater and mix with mayonnaise. Squeeze the apple juice before adding it to the composition so that it is not too watery a salad. You can serve the salad on a slice of toast, with the mention that it is black or rye.

Salad in two colors
Because we are in the middle of autumn, we offer you a consistent and tasty salad, which is based on a seasonal vegetable & ndash beetroot. So, you need a cup of brown rice, half a chicken breast, a can of sweet corn, horseradish and, of course, a beetroot. In a bowl, mix the boiled rice with the chicken breast cooked in the oven or on the grill and season with a little salt and pepper. This will be the first layer of our salad. For the second layer we will mix the sweet corn with boiled and grated beets, horseradish, also grated, a tablespoon of vinegar, one of olive oil and salt. Add the composition over the rice and the salad is only good to serve.

Something sweet
An invigorating shake and only good for the figure. You need a cup of orange juice, an apple, a fat-free yogurt, a tablespoon of honey, half a teaspoon of cinnamon and a few biscuits. In a blender, mix all the ingredients, and add the composition over the chopped biscuits in a tall glass.
You can decorate with a slice of orange or apple and the dessert is ready.


AN AUTUMN APPETIZER

Mushrooms with the aroma of a leaf, endive grown in the field without light, the first ripe grapes of this season, gorgonzola with a decadent air, some tender lettuce leaves and green walnut kernels. These are the little treasures of autumn that I managed to gather for you today in a poetic salad bowl.


Cut 3-4 hats of champignon mushrooms into thin slices. Heat 50 ml of olive oil together with a clove of uncooked garlic. Fry the mushrooms until the liquid disappears and an autumn color takes over their white faces. Season with salt, pepper and nutmeg.


Cut two endives into not very thin rings, a few white and red grapes in half, and as a base, use the broken salad by hand into suitable pieces. Never use the knife to chop the salad, as it will keep it fresh and firm for a long time.
Mix everything in a salad bowl. Spread broken pieces of gorgonzola and green walnut kernels on top. If you don't have it on hand, as happened to me today, nuts are good too.


Make a dressing of half a lemon, half an orange, olive oil and salt. Pour it over the salad. Season with salt and crushed pepper into larger pieces.


In this Indian summer atmosphere, in this mild and dreamy September, the words escape far over the forests, leaving room for a more appropriate silence, a prelude to an explosion of smells and colors, a subtle metronome of the autumns of our lives.

"Golden Autumn" salad - simple and tasty!

A very successful recipe, the result is tasty and colorful, we recommend. It is simply prepared from affordable ingredients.

INGRDEDIENTE:

& # 8211 200 gr of boiled carrot (1-2 carrots)

& # 8211 200 gr of fresh cucumber (1 cucumber).

For mayonnaise:

METHOD OF PREPARATION:
